Cooking Instructions:
Roasting:
- Preheat your oven to 450°F (232°C).
- Place the rib roast in a roasting pan, bone side down, and insert a meat thermometer into the thickest part of the meat, avoiding contact with the bone.
- Roast at 450°F for 15 minutes to develop a nice crust, then reduce the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches your desired doneness:
- 125°F (52°C) for rare
- 135°F (57°C) for medium rare
- 145°F (63°C) for medium
- Remove from the oven and let it rest for at least 20 minutes before carving.
Reverse Sear:
- Preheat your oven to 225°F (107°C).
- Season the rib roast with Grandpa’s Prime Rib Rub and place it on a rack in a roasting pan.
- Roast slowly in the oven until the internal temperature reaches 10-15°F below your desired doneness.
- Increase the oven temperature to 500°F (260°C) or use a hot grill to sear the roast for about 10-15 minutes until a golden crust forms.
- Let it rest for at least 20 minutes before carving.
