Korean-Flavored Boneless Beef Short Ribs & Rice

Ingredients:
- 3 lbs Maplewood Meats Choice Black Angus Boneless Beef Short Ribs, cut into large chunks
- 1 tablespoon vegetable oil (if using a Dutch oven)
- 1 cup low-sodium soy sauce
- ½ cup brown sugar
- ½ cup beef broth or water
- ¼ cup rice vinegar
- 2 tablespoons sesame oil
- 6 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 1 Asian pear (or a ripe Bosc pear), grated
- 1 small onion, finely chopped
- 1 teaspoon crushed red pepper flakes (adjust to taste)
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon toasted sesame seeds (for garnish)
- 4 green onions, thinly sliced (for garnish)
For Serving:
- Steamed jasmine or short-grain white rice
- Optional: Kimchi, sautéed vegetables, or pickled radish
Instructions:
1. Prepare the Beef:
Pat the short ribs dry with paper towels. If using a Dutch oven, heat the vegetable oil over medium-high heat. Sear the beef in batches until browned on all sides, about 2-3 minutes per side. Transfer to a plate.
2. Make the Marinade:
In a bowl, whisk together soy sauce, brown sugar, beef broth, rice vinegar, sesame oil, garlic, ginger, grated pear, chopped onion, red pepper flakes, and gochujang until well combined.
3. Slow Cook:
- For Dutch Oven: Return the beef to the pot, pour the marinade over the meat, and bring it to a gentle simmer. Cover and cook in a preheated oven at 325°F for 2.5 to 3 hours, until the beef is fork-tender.
- For Crock Pot: Place the seared beef in the crock pot, pour the marinade over, cover, and cook on low for 6-8 hours or on high for 4-5 hours, until tender.
4. Finish & Serve:
Remove the beef and shred or slice it into large chunks. If the sauce is too thin, simmer it uncovered on the stovetop until slightly thickened. Return the beef to the sauce to coat.
Serve the short ribs over steamed rice, garnished with toasted sesame seeds and green onions. Add kimchi or sautéed vegetables on the side for extra flavor.
